Ingredients
For the Donuts
- 1½ cups almond flour
- 2 tablespoons coconut flour
- ⅓ cup powdered allulose or another powdered keto sweetener

- 2 large eggs, room temperature
- ¼ cup unsalted butter, melted
- ¼ cup unsweetened almond milk
- 2 tablespoons heavy cream
- 1 teaspoon vanilla extract
- ½ teaspoon xanthan gum, optional for a softer, more elastic texture
For the Vanilla Glaze
- ¾ cup powdered allulose
- 2 tablespoons heavy cream or unsweetened almond milk
- 1 tablespoon melted butter
- ½ teaspoon vanilla extract
- 1–2 teaspoons warm water, as needed
Instructions
- Prepare the oven and pan: Preheat the oven to 350°F (175°C). Lightly grease an 8-cavity donut pan with butter or nonstick spray.
- Combine the dry ingredients: In a medium bowl, whisk together almond flour, coconut flour, powdered sweetener, baking powder, salt, and xanthan gum if using. Break up any lumps.
- Mix the wet ingredients: In another bowl, whisk the eggs, melted butter, almond milk, heavy cream, and vanilla extract until smooth.
- Make the batter: Pour the wet mixture into the dry ingredients. Stir gently until everything is incorporated. Don’t overmix—the batter should be thick but soft.
- Fill the donut pan: Spoon or pipe the batter into the prepared donut cavities, filling each about ⅔ to ¾ full. Smooth the tops with a damp finger or spatula.

- Allow the glaze to set for 10–15 minutes. For a thicker glaze, dip each donut a second time after the first layer has partially set.
