🌯 Keto Chicken Bacon Ranch Taquitos 😋❤️

Crispy, cheesy, creamy, and packed with tender chicken, smoky bacon, and ranch flavor, these keto taquitos make an easy snack, appetizer, lunch, or party treat. The cheese-based shells become wonderfully crisp around the flavorful filling without traditional tortillas.

Ingredients

For the Filling

  • 2 cups cooked shredded chicken
  • 6 slices bacon, cooked and finely chopped
  • 4 oz (115 g) cream cheese, softened
  • ½ cup shredded cheddar cheese
  • ¼ cup shredded mozzarella cheese
  • 1½ tablespoons ranch seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley or green onions, optional

For the Cheese Shells

  • 2 cups shredded mozzarella cheese
  • ½ cup shredded cheddar cheese

For Serving

  • Ranch dressing
  • Chopped green onions
  • Fresh parsley
  • Extra cooked bacon, crumbled, optional

Instructions

  1. Prepare the chicken filling: Add the shredded chicken, chopped bacon, softened cream cheese, cheddar, mozzarella, ranch seasoning, garlic powder, onion powder, and black pepper to a bowl.
  2. Mix until creamy: Stir thoroughly until the cream cheese coats the chicken and all the ingredients are evenly combined. Fold in green onions or parsley if desired.
  3. Prepare the baking sheet: Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  4. Make the cheese shells: Place small portions of shredded mozzarella and cheddar onto the parchment, forming approximately 12 thin circles. Leave space between each one because the cheese will spread as it melts.
  5. Bake the cheese: Bake for about 5–7 minutes, or until the cheese has completely melted and the edges are beginning to turn golden brown.
  6. Add the filling: Remove the tray from the oven. Let the melted cheese cool for about 30–60 seconds, just until it is firm enough to handle but still flexible. Place approximately 1–1½ tablespoons of chicken-bacon filling near one edge of each cheese circle.
  7. Roll the taquitos: Carefully roll each cheese shell tightly around the filling. Place each taquito seam-side down on the baking sheet.
  8. Crisp them up: Return the taquitos to the oven and bake for another 5–8 minutes, until the outside is deeply golden and crisp.
  9. Cool briefly: Let them rest for 2–3 minutes before serving. The shells will become even crispier as they cool.

🌶️ Optional Air-Fryer Method

Prepare and roll the taquitos as above. Place them in a lightly greased air-fryer basket, seam-side down, and cook at 375°F (190°C) for 4–6 minutes, checking frequently because cheese shells can brown quickly.

Serve hot with:

  • Ranch dressing
  • Jalapeño ranch
  • Sour cream
  • Guacamole
  • Salsa, if it fits your carb target
  • Extra crispy bacon and sliced green onions

💪 Keto & Protein Notes

Chicken and bacon provide the majority of the protein, while the cheese-based shells keep these taquitos very low in carbohydrates compared with traditional tortilla taquitos. Check the nutrition label on your ranch seasoning and any prepared sauces, since some varieties contain added sugar or starch.

Approximate per taquito: 150–190 calories, 10–13 g protein, and roughly 1–2 g net carbs, depending on the exact ingredients and portion size.
