π Ingredients
- 4 small flour tortillas (or whole-wheat/low-carb tortillas)
- Β½ cup fresh blueberries, or thawed frozen blueberries, well drained
- 3 oz cream cheese, softened
- 1β2 tbsp powdered sweetener, such as erythritol, to taste
- Β½ tsp vanilla extract
- Β½ tsp cinnamon
- 1 tbsp butter or cooking spray, for the pan
- Optional: 1 tsp lemon zest
- Optional: 1β2 tbsp chopped nuts

- Make the filling
In a bowl, mix the softened cream cheese, powdered sweetener, vanilla, and cinnamon until smooth. Add lemon zest if using. - Assemble
Spread the cream-cheese mixture over half of each tortilla. Sprinkle the blueberries evenly over the filling. Fold each tortilla in half to create a quesadilla. - Cook
Heat a nonstick skillet over medium-low heat. Lightly butter the pan or use cooking spray.
Place the quesadillas in the skillet and cook for about 2β3 minutes per side, gently pressing with a spatula, until golden brown and crispy and the filling is warm.
- Rest & serve
Let them cool for 1β2 minutes before slicing. Serve warm.

- A drizzle of sugar-free maple syrup
- Powdered sweetener
- Greek yogurt
- Extra fresh blueberries
- A little cinnamon
π‘ Tips
- If using frozen blueberries, drain them very well so the quesadillas donβt become soggy.
- Keep the heat medium-low so the tortilla browns without burning before the filling warms.
- For extra protein, mix 1β2 tbsp Greek yogurt or a little vanilla protein powder into the cream cheese.
